Ingredients

4 Sanderson Farms® Chicken Thighs

¼ teaspoon salt

¼ teaspoon ground black pepper

¼ teaspoon onion powder

¼ teaspoon garlic powder

½ cup apricot preserves

¼ cup country Dijon mustard

1 teaspoon brown sugar

½ teaspoon fresh lemon juice

¼ teaspoon salt

⅛ teaspoon ground black pepper

2 cups cooked basmati rice

Directions

1. Preheat oven to 350°F.

2. Season chicken with 1/4 teaspoon salt, 1/4 teaspoon black pepper, onion powder and garlic powder, including the meat under the skin.

3. For the glaze, in a small bowl, mix the apricot preserves, mustard, brown sugar, lemon juice, ¼ teaspoon salt and 1/8 teaspoon black pepper.

4. Spoon and spread some of the glaze on the bottom of the chicken thighs.

5. Place chicken thighs, skin side up, on an oiled rack on a baking sheet lined with aluminum foil. Bake in preheated 350°F oven 25 minutes.

6. Spoon and spread the remaining glaze on the bottom of the chicken thighs and on top of the skin. Bake an additional 35 minutes until the chicken reaches an internal temperature of 180°F or until the juices run clear.

7. Serve with cooked basmati rice.

8. TIP: As you are cooking, set aside the leftover apricot preserves. This makes for the perfect garnish to impress your dinner guests.
