Crunchy Parmesan Chicken

Ingredients:

3 Sanderson Farms® Boneless, Skinless Chicken Breast Fillets
½ cup buttery cracker crumbs
¼ cup grated Parmesan cheese
1 teaspoon dried chopped parsley
½ cup butter or margarine, melted
Salt and black pepper, to taste

Preparation:

1. Preheat oven to 350°F.
2. Combine cracker crumbs, Parmesan cheese and parsley in a small bowl.
3. Dip chicken breast fillets in melted butter. Season with salt and black pepper.
4. Place chicken breast fillets in a lightly greased 8 X 11.5 X 2-inch (2-quart) baking dish.
5. Sprinkle cracker crumb mixture over chicken.
6. Bake, uncovered, in preheated 350°F oven 50 minutes or until chicken is to an internal temperature of 165°F.
7. Broil 2 minutes.

Yield: 3 servings.
